Marinated mozzarella balls with sun-dried tomatoes or piadine with cream cheese, prosciutto and rocket - what will it be?

A summer's day, a blanket and fresh air - all that's missing from these perfect ingredients for a picnic in the mountains of South Tyrol is one thing: something good to eat. We've put together a few simple and delicious treats that will fit perfectly in your rucksack.


Lentil salad with vegetables and feta - ingredients for 4 portions:

  • 150 g mountain lentils
  • 400 ml water
  • 1 leek
  • ½ a yellow pepper
  • ½ a courgette
  • 1 red pepper
  • 2 carrots
  • 150 g feta cheese
  • lemon juice
  • olive oil
  • salt and pepper to taste

6 steps for preparation:

  • Cook the lentils in 400 ml of water for about 25 minutes until soft, adding salt shortly before they are done.
  • Let them cool and in the meantime, finely chop the leek, peppers, courgette and carrots.
  • Sauté all the vegetables in a little olive oil in a frying pan until crisp-tender and season with salt and pepper.
  • Mix the sautéed vegetables into the cooled lentils.
  • Then, crumble the feta with your hands and fold it in.
  • Season to taste with lemon juice, olive oil, salt and pepper.

The salad is delicious served lukewarm or the next day, after the flavours have had time to infuse.


Marinated mozzarella balls with sun-dried tomatoes and parsley - ingredients:

  • 200 g mozzarella balls
  • 2 tbsp freshly chopped parsley
  • 4-5 sun-dried tomatoes in oil
  • 6 tbsp olive oil
  • salt and pepper to taste

6 steps for preparation:

  • Place the mozzarella balls in a clean jar or bowl.
  • Drain the sun-dried tomatoes and chop them finely.
  • Add them to the mozzarella along with the chopped parsley.
  • Pour in the olive oil, then season with salt and pepper.
  • Mix everything well and then seal the jar.
  • Ideally, let it all infuse in the fridge for a few hours.

Herb and yoghurt dip for vegetable sticks - ingredients:

  • 150 g natural yoghurt
  • 1 tbsp olive oil
  • 2 tbsp freshly chopped parsley
  • 2 tbsp finely chopped chives
  • ½ a clove of garlic, finely chopped
  • salt and pepper to taste

3 steps for preparation:

  • Put all the ingredients in a bowl and stir well.
  • Season to taste with salt and pepper.
  • The dip goes well with raw vegetables like carrots, cucumber, peppers or celery sticks.

The dip also makes a wonderful salad dressing: just add a little lemon juice.


Piadine with cream cheese, prosciutto and rocket - ingredients:

  • 2 piadine (Italian flatbreads)
  • cream cheese
  • a few slices of prosciutto
  • a handful of fresh rocket

3 steps for preparation:

  • Lay the piadine out on a flat surface and spread them with cream cheese.
  • Top with prosciutto and rocket.
  • Roll the piadine up tightly and cut them diagonally into wide pieces.
