Very healthy, very colourful: a Protein Power Bowl with tofu and a lemon-tahini dressing
This time, a wholesome dish is on the (cooking) menu: Proteins transport molecules like oxygen and nutrients through the body and store other substances, such as iron. These are just two reasons why this power bowl is a perfect fit for a balanced diet.
Ingredients for 2 servings:
- 120 g quinoa or rice
- 1 pinch of salt
- 150 g tofu
- 1 tsp olive oil
- a little lemon juice
- salt and pepper
- 1 small broccoli, in florets
- 100 g frozen peas
- 1 large carrot
- 2 tbsp tahini
- juice of 1 lemon
- 1 tsp maple syrup or honey
- 1 small garlic clove, finely grated
- 2-3 tbsp water (to thin)
- fresh parsley
- 1 tsp sesame seeds
5 steps for preparation:
- Cook the quinoa or rice in lightly salted water.
- Season the tofu with oil, salt, pepper, and lemon juice, then pan-fry or bake in the oven.
- Briefly blanch the vegetables - broccoli, carrot and peas.
- Dressing: Whisk the tahini, lemon juice, maple syrup, garlic, and water together until creamy.
- Arrange everything in a bowl and top with the dressing, parsley, and sesame seeds.
