The historic Ansitz Dornach estate also offers an organic farm inn featuring modern architecture. Here, Karoline conjures up dishes using seasonal ingredients from the estate's own farm, complemented by products from the estate's own animals.
Dandelion and elm seed dumplings, baked dandelion flowers, wild garlic pasta, young hop shoots, green asparagus, delicate lamb dishes and refreshing quince sorbet in spring; fresh goat's cheese with tomatoes, stuffed vine leaves, wild herb pesto, baked courgette flowers, the traditional ‘Tschutsch’ and fruity raspberry desserts in summer; chestnut noodles, chestnut cream soup and autumnal desserts based on sweet chestnuts in autumn.
Homemade juices: apple, elderberry and redcurrant
Patrick serves their own organic wines, perfectly matched to the dishes and the season.
